Tasty Tuesdays: Chilly Days White Bean Chicken Chili

It’s Tuesday and I’ve got another tasty recipe coming at you from the wonderful boyfriend, J! We love cooking together and J is great about helping me out in the kitchen. But he is the true master of comfort food and what could be more comforting on these blustery Pacific Northwestern nights than a hot bowl of White Bean Chicken Chili? This is the part where I step back and into the role of sous chef and let the genius go to work. J has been kind enough to teach me this recipe so all the credit goes to him, anonymously. Start this one in the slow cooker before you go to work in the morning and your house will reek of deliciousness by the time you get home in the evening – so easy. With that, let’s get to work!

What you need:

  • 1 lbs chicken – diced (or vegetarian friends can skip this and it’s just as good!)
  • 2 c. chicken broth
  • 2 cans white beans
  • 1/2 red bell pepper – chopped
  • 1/2 sweet yellow onion – chopped
  • 1 can diced green chilis
  • 1 jalapeño – finely chopped
  • 4 cloves garlic – pressed or finely chopped
  • 1/2 tbsp cumin
  • 1/2 tbsp chili powder
  • 1/2 tbsp freshly ground black pepper
  • 2 tbsp flour (almond flour for my gluten-free buddies)
  • sea salt – to taste
  • sour cream – for garnish
  • shredded cheddar cheese – for garnish
  • sliced avocado – for garnish

What you do:

Combine all ingredients (except garnish) in a slow cooker, mix well, and cook on lowest setting for 6 – 10 hours.

Dish up, garnish with the good stuff, and dig in! Warm and satisfying…

    I’m with Eth. Looks really really good! And I need to start utilizing my crock pot more. I always say that but then I am afraid to leave it on while I’m out at work (I’m gone for longer than 10 hours). I could definitely try it on my work from home day sometime though!

      I work for 10 hours on most days so our crock pot is on for at least 11 hours at a time. Just make sure you put in a little extra chicken broth or water and you should be ok to leave it for a little longer. 🙂
