Tasty Tuesdays: Stuffed Bacon-Wrapped Jalapenos

We’re getting back to our regularly scheduled programming with some good eats from Tasty Tuesdays! I learned some great new recipes from the Middle East to teach you guys once I can sift through and find the photos to go with them. So in the interim, here is an offering from the brilliant mind of my love, J. He is a master chef of the true blue comfort food genre. This is one of my favorites now and very apropos for the upcoming holiday. Plus its the perfect appetizer to enjoy during the Thanksgiving football games, or even to offer your dinner guests before the main festivities begin (i.e. turkey). Heck, this is good for anytime – there’s bacon – and I need say nothing more. So enjoy and we (J, Cobalt and I) wish you a very Happy Thanksgiving!

What you need:

  • 6 jalapenos – halved and seeds removed
  • 1/4 c. cream cheese
  • 1/4 c. cotija or queso fresco
  • 6 strips thick-cut bacon – cut in half
  • toothpicks

What you do:

Heat the oven to 400 degrees Fahrenheit.

In a small bowl mix the cream cheese and the Mexican cheese.

Fill the jalapenos with the cheese mixture.

Wrap the bacon around the jalapenos and hold in place with toothpicks.

Place on a cookie cooling rack and set the rack over a baking sheet.

Bake for 20 minutes or until bacon is thoroughly cooked.

Remove toothpicks and dig in!

    this is so frigggggnnn krooooell! i’m starved! what with, say, two beers (jes’ 1 won’t do) this’d make my workplace pretty tolerable!
    (i’ll give this recipe to my son — both of ’em (wunza sunnenlaw), seriously!)
