Tasty Tuesdays: Packed Portobellos

Today’s recipe is a gem!  Easy and so delicious that my mouth is watering just thinking about it.  Seriously all you need to do with this recipe is mix, pack, bake, and send those mushrooms right into your belly!  Be creative with the stuffing – if it sounds yummy, add it in!  This is a gluten-free version but I don’t doubt that my vegetarian friends could come up with a fabulous meat-less version too.

What you need:

  • 1/2 lbs ground beef
  • 1/2 lbs Italian sausage
  • 1 egg
  • 1/2 c. Parmesan cheese, divided (Asiago works well too)
  • 1/4 c. almond flour (if you’re gluten-free, otherwise your choice)
  • 1/2 medium sweet yellow onion – diced
  • 1 Roma tomato – diced
  • 3 cloves garlic – pressed
  • 1/2 tbsp Italian seasoning (basil, rosemary, thyme, oregano in equal parts)
  • sea salt – to taste
  • 1/2 tsp black pepper
  • 4 Portobello mushrooms
  • 2 tbsp olive oil, divided
  • 4 fresh basil leave – chopped

What you do:

Heat oven to 375 degrees F.

In a large mixing bowl, combine all ingredients except half of cheese, mushrooms, oil, and fresh basil.  Mix thoroughly.

Drizzle half of the olive oil in a 13×9 glass baking dish.

Cut the stalks of the mushrooms so they are flush with the gills (i.e. remove completely).  Place the mushrooms in the baking dish and fill with the meat mixture until overflowing.  Sprinkle remaining cheese over top.  Dress with fresh basil and drizzle with olive oil.

Bake for 25 – 30 minutes.

    Nice! And kind of coincidental. I just made a helping of my mushroom chicken tonight. Though this looks much more elaborate and creative! My wife loves stuffed mushrooms, so I might just take notes here…
