Tasty Tuesdays: Pulled Beef and Apple Slaw Two-fer

Hello wonderful people!  Have I got a treat for you guys today – deliciousness times two.  It makes for a great meal to enjoy in the sunshine on the patio and it’s perfect for these busy summer days.  In all seriousness though, you just can’t have one of these recipes without the other.  They belong together like Ebony and Ivory, like Tom and Jerry, like Abbott and Costello, like… well, you get the picture.  So without further ado, here’s how you make fabulous pulled beef and apple slaw.

Pulled Beef Recipe

What you need:

  • 1 lbs steak (cut of your choice – I used sirloin)
  • 1 bottle hard dry cider
  • 2 tbsp apple cider vinegar
  • juice of one lime
  • 1/2 tbsp chili powder
  • 1/2 tbsp garlic salt
  • 1/2 tbsp paprika
  • 1/2 red pepper – diced
  • 1/2 sweet yellow onion – diced

What you do:

Combine all ingredients in a slow cook crock pot on lowest setting and cook for 6 – 12 hours.  If needed, add beef stock to keep steak moist.  I started the crock pot in the morning before I left for work and by the time I came home for dinner, the meat was falling apart and melt-in-your-mouth tender.

With two forks, gently pull the beef.

Apple Slaw Recipe

What you need:

  • 1/2 head green cabbage – shredded
  • 1 fuji apple – julienned
  • 1/2 c. mayonnaise
  • 1/4 c. honey
  • 2 tbsp apple cider vinegar
  • sea salt and black pepper to taste

What you do:

Combine mayo, honey, vinegar, salt, and pepper in a bowl to make the dressing.  Place cabbage and apple in a larger bowl and pour dressing over top.  Mix well, coating all cabbage and apple in dressing.

Now comes the good part.  J opted for the hoagie sandwich route with this, whereas I have the gluten-free thing going on so I went with tacos (corn tortillas).  Whatever you prefer, load up your bun or tortilla with a tasty bit of pulled beef, douse with your favorite BBQ sauce (J likes KC Masterpiece), and then top with some apple slaw.  Dig in!  And if you’re still feeling like you need more apples, crack open a hard cider to enjoy too!
