Tasty Tuesdays: Fantastic and Fast Pho

I’m ba-ack!  Missed you guys!  So I wish you all a very happy Tuesday.  I’m ready to rock with a new recipe of quick and easy pho.  Is there such a thing?  It might not be entirely authentic (I cheated and didn’t simmer the broth with beef bones for a day) but it turned out quite yummy.  Vegetarian friends could try this with vegetable broth and minus the beef to get some fantastic Vietnamese-style noodle soup.  Whatever your food preferences, I hope you enjoy.  The best part?  It’s super easy!

What you need (serves 4):

  • 1 lbs sirloin steak – cut into thin strips
  • 4 c. beef stock
  • 3 limes
  • 2 tbsp fish sauce
  • 1 c. bean sprouts
  • 1/2 large, sweet, yellow onion – sliced
  • 1 tsp ground cloves
  • 1/2 bunch cilantro – chopped
  • 1/2 c. basil leaves
  • 3 daikon radishes – thinly sliced
  • 2 Serrano chilis – thinly sliced
  • 1 package rice noodles
  • fish sauce and Sriracha to taste

What you do:

Bring the beef stock to a boil in a large pot.  Add cloves, juice of 2 limes, fish sauce.  Boil for 10 minutes.

Bring water to boil in a separate pot and add rice noodles.  They cook quickly so don’t let them sit for too long.  Drain and set aside.

Pour out the hot beef broth into bowls, add the rice noodles, bean sprouts, cilantro, basil, radishes, chilis and top with the rare sirloin.  Douse with additional fish sauce and/or Sriracha as desired.  Enjoy!

      If you go easy on the chilis and Sriracha sauce it won’t be very spicy at all. I like mine with a kick so I add a lot of the hot stuff. 🙂

    How did I miss this? I love Pho! I miss it so much since I moved from Ottawa. It’s hard to find out here 😦

      This isn’t the real deal, but it’ll do in a pinch! It’s hard to find good Vietnamese around here too…
