This is the good stuff, the “rei” (Spanish for “king”) of breakfasts! It’s easy to make, delicious, and hits the spot when you’re craving Mexican cuisine. I made this last Saturday and it was great to fuel us for the busy weekend. So without further ado, let’s dig in.
What you need (serves 4):
What you do:
In a skillet over medium heat cook chorizo. Drain of excess grease as needed.
In a separate skillet on medium low add oil and cook eggs over-easy. Set aside when done.
In a sauce pan on medium heat, warm refried beans.
Warm tortillas in a skillet on the stove top.
Spread refried beans over top of tortillas. Place over-easy egg on tortilla. Scoop two spoonfuls of chorizo over egg and garnish with tomatoes, green onions, and cheese.
Serve and enjoy!
