Tasty Tuesdays: Breakfast Tacos

A breakfast posting has been far too long in coming on here I realized.  This breakfast is pure savory deliciousness and scratches my itch for Mexican food every time.  J and I made it on a lazy weekend morning.  Add whatever veggies you have on hand and enjoy!  And don’t forget to have some Tapatio on hand – you’ll want it.

What you need:

  • 1/2 lbs of chorizo (pork or beef)
  • 1/2 sweet yellow onion – diced
  • 1/2 red bell pepper – diced
  • 1 roma tomato – diced
  • 1 jalapeño – sliced
  • 2 cloves garlic – pressed
  • 6 eggs
  • 4 corn tortillas
  • 1/2 head of cilantro – chopped (for garnish)

What you do:

Place chorizo in a skillet over medium heat.  Cook thoroughly.  Add onion, bell pepper, tomato, jalapeño, and garlic.  Cook until veggies soften.

Crack eggs into a bowl, add 1 tbsp of water and whisk until well-blended.  Add eggs to the skillet and mix in with meat and veggies.  Stir occasionally with a spatula to prevent eggs from burning or sticking to the pan.  When eggs are cooked, remove skillet from heat.

Warm tortillas in a clean skillet over medium heat.

Place tortillas on a plate and fill with egg mixture, top with cilantro and Tapatio.  Enjoy!

    Oh num! Have you ever heard of “Indian” tacos? The name is kind of tongue-in-cheek – aka. only something Native people feel comfortable using – but the basic idea is filling contained in a tortilla of fry bread. Holy crap, bad for you but sooooo good!

      Indian tacos… I haven’t heard of them, but wow, they sound fantastic! That could get me in so much trouble, and be totally worth it. 🙂 If you come across a recipe for it, let me know!
