Tasty Tuesdays: Pollo Asado

Break out the grill!  The weather is warming up and it’s time for some tasty Mexican food (I think I’m on a kick).  This is refreshing and delicious and you can replace the chicken with top sirloin (carne) or prawns (camarones) for an equally delicious dish.  This meal is so easy to make and just begs to be enjoyed on the porch with a margarita on the rocks.  So here we go!

What you need:

  • 1 lbs boneless skinless chicken breast – diced
  • 1/4 head of cabbage – chopped
  • 1/2 bunch of cilantro – chopped
  • 1/4 sweet yellow onion – chopped
  • handful of cherry tomatoes – halved
  • 3 cloves of garlic – pressed
  • 1/2 tbsp paprika
  • 1/2 tbsp chili powder
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper
  • corn tortillas

Place chicken and all spices/herbs in a ziplock bag in the fridge to marinate.  Allow to marinate at least 2 hours before cooking.

Before you heat up your grill line the grate with aluminum foil.  Let the grill warm up.  Place the marinated chicken on the aluminum foil.  Rotate chicken as needed and remove when it is thoroughly cooked (no pink remaining).

Remove aluminum foil from the grate and warm tortillas on the still-hot grill.  Set aside.

To serve: place tortilla flat on a place, line with chicken, layer with cabbage, cilantro, and onions.  Top with favorite hot sauce or guacamole and enjoy!
