Another recipe inspiration came whilst scraping the bottom of the barrel… erm… pantry. I don’t have any barrels. Suffice it to say, I need to go shopping.
Another easy and delicious dish inspired by duck with orange glaze. But this is easier and so much less expensive!
What you need:
Put chicken aside and preheat oven to 375 degrees. In a saucepan over medium heat combine all remaining ingredients (use mandarins and syrup from the can). Bring to simmer and stir frequently.
Place chicken in glass baking pan and pour the mandarin sauce over it. Bake for 30 minutes. Pull out every 10 minutes to recoat chicken in the sauce. Remove and enjoy on a bed of brown rice.
This goes great with some stir fried veggies! Enjoy!
