Tasty Tuesdays: Gourmet Burgers

As the weather warms again it will be time to heat up those grills… and I can’t wait!  I started making these scrumptious burgers last summer in an effort to incorporate more veggies into my diet.  Who says healthy can’t be tasty?  These burgers ended up being a summer staple for any camping trips and many a beach barbecue.  Very easy to make and oh, so yummy.

What you need:

  • 2 lbs of organic, grass-fed, ground beef (it’s worth it and makes such a difference in taste!)
  • 1/2 sweet yellow onion – finely chopped
  • 1/2 red bell pepper – finely chopped
  • 1/2 head of cilantro – finely chopped
  • 1 jalapeño – finely chopped
  • 3 cloves garlic – pressed
  • 3 crimini mushrooms – finely chopped
  • juice of one lime
  • 1 egg
  • 1/2 tbsp paprika
  • 1/2 tbsp chili powder
  • 1/2 tbsp sea salt
  • 1 roma tomato – sliced
  • 1 avocado – sliced

What you do:

Set aside tomato and avocado.  Combine all other ingredients in a bowl and mix well.  Form mixture into patties.

Start your grill (doesn’t matter if it’s gas or charcoal) and let heat up for about 10 minutes or until coals are hot.  Place patties on grill and close lid.  Cook until the meat is browned on the sides, about 7 minutes.  Flip burgers and let cook thoroughly.  Remove and serve with a slice of tomato and avocado.  Can sandwich these with your favorite burger buns or if you’re gluten-free like me – eat them just like this!
