Cooking Adventures: Chili Con Carne

Earlier in the week BF and I made dinner for his family and they requested chili.  They expected something basic, but in true foodie form I decided that was unacceptable and we had to wow them.  So here is the recipe for own enjoyment.  Perfect for cold winter nights and second day leftovers are even more fabulous!

What you need:

  • 1 lbs ground beef – cooked
  • 1 jalapeño – finely chopped
  • 1 tomato – diced
  • 1/2 red pepper – diced
  • 1/2 onion – diced
  • 1/2 leek – thinly sliced and separated
  • juice of one lime
  • 3 gloves of garlic – pressed
  • 2 tbsp paprika
  • 2 tsp chili powder
  • 2 tsp cayenne pepper
  • 2 tsp thyme
  • 2 tsp oregano
  • 2 tsp ground black pepper
  • sea salt to taste
  • 1 cup of dried or 1 can of kidney beans
  • 1 cup of dried or 1 can of black beans
  • 1 cup of dried or 1 can of pinto beans
  • pepper jack cheese – shredded
  • cilantro – finely chopped
  • 1 avocado – sliced

There are two options: 1. you can put all ingredients in a crock pot to cook over the course of 6-8 hours – use the dried beans and add water.  2. if you are on a time crunch I recommend using the canned beans and combining everything in a sauce pan over the stove top.

When we made this we were in a hurry so we did the stove top option and then put it in the slow cooker to simmer for a bit.  It still turned out great, but I highly recommend the slow cooker option if you have time – its lets the flavors meld perfectly.  Also, adjust the spice measurements to your own palette preferences.  Garnish with cheese, avocado, cilantro, and enjoy!
