Cooking Adventures: Chipotle Chicken with Quinoa

I posted a photo of this meal on Facebook last week and several friends asked me for the recipe so here it is!  This is a full-flavored dish so adjust the chipotle peppers and spices as needed.

What you need:

  • 2 chiles in adobo sauce (chipotles) chopped and with seeds removed
  • 4 tbsp of adobo sauce
  • 0.5 lbs of chorizo (optional)
  • 1 lbs of boneless skinless chicken dice into bite size pieces
  • 1/2 pepper diced(red, orange, or yellow – your choice)
  • 2 roma tomatoes diced
  • 1/2 leek sliced
  • 1/2 onion diced
  • 2 garlic segments crushed
  • juice of 1 lime
  • 1 tbsp coconut oil
  • 1 tsp chile powder
  • 1 tsp paprika
  • sea salt to taste
  • 1 c. quinoa
  • 1/2 head of cilantro

Cook quinoa as you would cook rice. Bring 1.5 cups of water to boil in a medium sauce pan. Add coconut oil, sea salt, and quinoa. Boil quinoa until all water is absorbed or evaporated.

In a skillet place chorizo, chicken, garlic, chipotle peppers and adobo sauce on medium heat until meat is cooked. Add all other ingredients (except cilantro) and cook until vegetables are tender. Mix in quinoa, garnish with cilantro, and serve.

This meal goes great with refried beans as a side dish.
